Tips for Success
Test your fruit’s sweetness before adding sugar – it’s easier to add more than to fix a too-sweet filling.
Let fruit and sugar sit together for 15 minutes. This shows how juicy your filling will be so you can adjust your thickener accordingly.
Cut fruit into even pieces so everything cooks at the same rate. For apples and pears, go for 1/4-inch slices.
If your fruit is extra juicy, add an extra tablespoon of thickener to avoid a soupy pie.
