Refreshing, fruity, and not too sweet, mojitos are one of my favorite drinks. If you have a patch of mint in your back yard I highly encourage you to make peach mojitos your summer cocktail of choice. The ingredients scream summer and aren’t quite right at any other time, like all the best seasonal things of life.

Peach Mojitos

Sweet peaches with plenty of tart lime juiice and fresh mint combine for the perfect fruity summertime cocktail. Makes 1, so double or triple for friends.

Total Time 10 minutes
Serving Size 1 drink

Ingredients 

  • 2 teaspoons sugar
  • 1 tablespoon fresh lime juice
  • 12 large mint leaves
  • 1 medium peach very ripe
  • 2 ounces club soda
  • 2 ounces white rum

Instructions 

  • Prep peach. Peel the peach and slice into 1/2 inch thick slices.

  • Muddle. Add half the peach slices in a glass, reserving the rest for garnish. Add the mint leaves, sugar, and lime juice. Muddle well until the peach is softened. If the peach is under ripe and too hard, let it sit with the sugar for a few minutes until it softens.

  • Top with liquids. Add the ice, rum, club soda and stir well. Add remaining peach slices to the side of the glass and on top of the drink for garnsih. Add a mint spring and lime wedge if you'd like.

Notes

Frozen peaches will work, but allow frozen ones to soften at room temperature for a few minutes to make them easier to muddle.ย ย 
The sweetness of your mojito will depend a lot on how ripe your peaches are.ย  You may need to add more sugar if using underripe fruit.ย

When it comes to the peaches, ripeness is key. A perfectly ripe peach will practically melt into the drink, but a too-firm one will be a struggle. If your peach is slightly underripe, letting it sit with the sugar for a few minutes helps draw out the juices and soften the fruit. But even better would be waiting until tomorrow!

Kitchen Wisdom

Mint one of the easiest herbs to grow yourself. Plant it in a pot outside and you’ll have endless mint for mojitos, tea, and cooking all season long. Just snip what you need and it grows right back. It is the least finicky plant ever and will do just fun in partial shade, poor soil, drought, whatever.

Tips for Success

Pick peaches that yield slightly to pressure and smell fragrant at the stem end

Tear mint leaves just before using – pre-torn leaves will brown and lose flavor

Use a sturdy glass when muddling to avoid breakage

Ingredients and Equipment

Sugar: Granulated sugar is all you need here.

Lime juice: Fresh lime juice will give you the best flavor, but bottled isn’t the end of the world.

Mint leaves: If you donโ€™t grow your own mint, you can typically find these in the produce section, in overpriced little plastic containers. (Please grow your own!)

Peaches: I also like to peel my peaches for easy muddling.

Club soda: You donโ€™t need any fancy brands here. If you can find a 6-pack of cans, that is super handy to avoid wasting a whole bottle.

Make It Your Own

Switch up the fruit with nectarines, plums, or even ripe apricots. Not a rum fan? Try vodka for a lighter touch or bourbon for something more complex. For a mocktail version, replace the rum with extra club soda and a splash of peach nectar.

Storage & Serving

While mojitos are best enjoyed fresh, you can prep the peaches and mint up to an hour ahead – just hold off on the muddling until serving time.

For a party, set up a DIY mojito bar with pre-sliced peaches, mint leaves, and measured portions of rum.
