What you’ll need
For the Drink
- 1 1/2 cups strawberries
- 2 tablespoons sugar
- 1 cup light or white rum
- 2 cups pineapple juice
- 1/2 cup club soda
For Garnish
- fresh pineapple chunks
- fresh strawberries
- fresh mint leaves
You’ll also need a drink pitcher and a food processor or blender (or a lot of patience to chop strawberries into little tiny pieces!)
Let’s make our drink
This, my friends, is easy! Once you chop the strawberries it’s a simple matter of mixing up stuff.
I like small bits of strawberry in my drink, so I just chop using the food processor. if you’d like it smooth, keep chopping until they are pureed, or use a blender.
Add the berries and sugar to a pitcher, stir them up, and set aside the strawberries to get juicy.
Add the pineapple juice and rum. If you’re serving right away, add the club soda. If you’re serving later, add the soda right beforehand so it doesn’t lose its carbonation.
Add fresh fruit and/ or mint for garnish!

Tropical + Sweet Strawberry Pineapple Rum Cocktail
Ingredients
For the Drink
- 1 1/2 cups strawberries
- 2 tablespoons sugar
- 1 cup light or white rum
- 2 cups pineapple juice
- 1/2 cup club soda
For Garnish
- fresh pineapple chunks
- fresh strawberries
- fresh mint leaves
Instructions
- Chop the strawberries in a food processor or by hand. For an extra-smooth texture, completely puree them.
- Mix the strawberries and sugar right in a large pitcher. Allow to sit at room temperature for a few minutes until the strawberries are juicy. Add the rum, pineapple juice, and club soda. Stir throughly.
- Serve over ice, garnished with fresh strawberry, pineapple chunks, and mint.
