Capture Summer with Peach Preserves

Gather your ingredients: 4 cups ripe peaches, lemon juice, fruit fresh, cinnamon, powdered pectin, sugar, and optional butter.

Ingredients You’ll Need

Wash jars in hot soap water. Place them in a water bath canner, fully submerged, and simmer over medium heat.

Preparing the Jars

In a large pot, combine peaches, lemon juice, fruit fresh, and cinnamon. Stir well over medium-high heat.

Cooking the Peaches

Stir in pectin and bring to a full rolling boil. Add sugar, mix well, and return to a full rolling boil. Optionally, add butter to reduce foam.

Boil the mixture for 1 minute, stirring constantly. Remove from heat and ladle hot preserves into jars, leaving ½ inch headspace.

Boiling and Filling Jars

Wipe rims clean, place lids, and tighten rings. Process jars in a water bath canner for 10 minutes, then let them rest for 5 minutes.

Sealing the Jars

Cool jars for 12-24 hours. Check seals and store properly sealed jars in a cool, dark place for up to 18 months.
