Prepare the strawberries. Wash and dry the strawberries and allow them to come to room temperature.
Melt the white candy melts. In a microwave-safe bowl, melt the white candy melts according to package directions. Pour the blue sparkling sugar into a small bowl
Dip into the white chocolate and add blue sugar. Holding the strawberry by the green top or with a skewer, dip it into the white candy coating. You can either coat it fully or leave red "shoulders". Immediately after coating, dip the strawberry into a small bowl of blue sugar. Place onto wax paper to harden.
Add red stripes. Melt the red candy melts in a small microwave-safe bowl and transfer into a small zipper-top bag. Pipe red stripes onto the white portion of the strawberries.
