Buckeye Balls

A super easy candy recipe for the chocolate and peanut butter lovers.

Ingredients

  • 1 16 ounce jar creamy peanut butter 2 cups
  • 1 cup butter softened
  • 6 cups powdered sugar
  • 2 cups semi-sweet chocolate morsels
  • 2 tablespoons shortening

Instructions

  • Mix the filling. Beat the peanut butter and softened butter at medium speed with an electric mixer until blended. Gradually add the powdered sugar, beating until the mixture is fully combined and thick enough to roll.
  • Shape into balls. Shape the peanut butter mixture into 1-inch balls and place them on wax paper or parchment paper. Chill for 10 minutes, or until firm.
  • Melt the chocolate. Place the chocolate morsels and shortening in a microwave-safe 2-quart glass bowl. Microwave on high for 90 seconds, stirring twice, until melted and smooth.
  • Dip. Dip each buckeye ball in the chocolate mixture until partially coated. Place on wax paper or parchment paper and let stand until the chocolate is set.
  • Store. Store the buckeye balls in an airtight container.

Notes

For best results, chill the buckeye balls before dipping so they hold their shape in the warm chocolate. Store in an airtight container in the refrigerator, or freeze for longer storage.
