Ingredients
Salad
2large cucumberspeeled and sliced, about 10-12 ounces each
4medium tomatoes or 1 pound cherry tomatoesdiced or halved
1/2red onionthinly sliced
Dressing
1/4cupolive oil
2tablespoonsred wine vinegar
1teaspoonhoney or sugaroptional
2tablespoonsfresh basilchopped
1tablespoonfresh parsleychopped
Salt and pepperto taste
Instructions
Prepare Vegetables: In a large bowl, combine sliced cucumbers, diced tomatoes, and sliced red onion. I like the cucumbers and tomatoes to be roughly the same size, and the onion to be sliced very thin. But you might prefer something different!
Make Dressing: In a small bowl, whisk olive oil, red wine vinegar, honey (if using), chopped herbs, salt, and pepper until well blended. This will take a minute or two to blend the oil and vinegar well.
Combine: Pour the dressing over the vegetables. Toss gently to coat everything evenly.
Chill (Optional): For best flavor, refrigerate the salad for 30 minutes to allow flavors to meld. Adjust seasoning if necessary and serve chilled or at room temperature.

Freshness is Key: The fresher the vegetables, the better the salad.
Variations: Feel free to add feta cheese, olives, or avocado.
