Equipment

  • Large mixing bowl
  • Small whisk or fork
  • Cutting board and knife

Ingredients

Salad

  • 2 large cucumbers peeled and sliced, about 10-12 ounces each
  • 4 medium tomatoes or 1 pound cherry tomatoes diced or halved
  • 1/2 red onion thinly sliced

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey or sugar optional
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste

Instructions

  • Prepare Vegetables: In a large bowl, combine sliced cucumbers, diced tomatoes, and sliced red onion. I like the cucumbers and tomatoes to be roughly the same size, and the onion to be sliced very thin. But you might prefer something different!

  • Make Dressing: In a small bowl, whisk olive oil, red wine vinegar, honey (if using), chopped herbs, salt, and pepper until well blended. This will take a minute or two to blend the oil and vinegar well.
A glass measuring cup containing salad dressing made with olive oil, red wine vinegar, and fresh chopped herbs, with a whisk inside the cup for mixing.
  • Combine: Pour the dressing over the vegetables. Toss gently to coat everything evenly.

  • Chill (Optional): For best flavor, refrigerate the salad for 30 minutes to allow flavors to meld. Adjust seasoning if necessary and serve chilled or at room temperature.

Notes

Freshness is Key: The fresher the vegetables, the better the salad.
Variations: Feel free to add feta cheese, olives, or avocado.
Pairing: Goes well with grilled dishes, sandwiches, and as a light meal on its own.
