- 6 boneless skinless chicken thighs
- ½ cup soy sauce
- ½ cup brown sugar
- ½ cup canned pineapple juice
- ¼ cup ketchup
- 1 tablespoon sesame oil
- 1 tablespoon rice wine vinegar
- 4 garlic cloves minced
- 2 teaspoons ginger paste
Combine. In a large zip top bag, combine soy sauce, brown sugar, pineapple juice, ketchup, sesame oil, rice wine vinegar, garlic, and ginger paste. Place chicken thighs on top.
Marinate. Seal bag, removing excess air. Refrigerate for 4 to 6 hours.
Preheat grill. Heat grill pan over medium heat or preheat grill to medium-high heat.
Cook. Remove chicken from marinade; discard marinade. Grill chicken for 4 to 5 minutes per side until internal temperature reaches 165°F.
Rest. Remove from heat and let rest for 5 minutes before serving.
If you don't have a grill, a broiler works well as an alternative cooking method.
Watch for flare-ups during cooking due to the sugar content in the marinade.
