Ingredients

  • 6 boneless skinless chicken thighs
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ½ cup canned pineapple juice
  • ¼ cup ketchup
  • 1 tablespoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 4 garlic cloves minced
  • 2 teaspoons ginger paste

Instructions

  • Combine. In a large zip top bag, combine soy sauce, brown sugar, pineapple juice, ketchup, sesame oil, rice wine vinegar, garlic, and ginger paste. Place chicken thighs on top.
  • Marinate. Seal bag, removing excess air. Refrigerate for 4 to 6 hours.
  • Preheat grill. Heat grill pan over medium heat or preheat grill to medium-high heat.
  • Cook. Remove chicken from marinade; discard marinade. Grill chicken for 4 to 5 minutes per side until internal temperature reaches 165°F.
  • Rest. Remove from heat and let rest for 5 minutes before serving.

Notes

If you don't have a grill, a broiler works well as an alternative cooking method.
Watch for flare-ups during cooking due to the sugar content in the marinade.
