- 3 tablespoons paprika
- 2 tablespoons kosher salt
- 2 tablespoons garlic powder
- 1 tablespoon ground black pepper
- 1 tablespoon ground white pepper
- 1 tablespoons onion powder
- 1 tablespoon dried oregano
- 1/2 tablespoon cayenne
- 1/2 tablespoon thyme
- 20 wings
- 3 tablespoons butter
- peanut oil for frying
Combine all seasonings for the cajun seasoning in small bowl. (Or substitute 3/4 cup of prepared cajun seasoning.)
Heat oil in your deep fryer to 370 degrees. Pat the wings dry and season with salt and pepper. Place them in a single layer in the deep fryer basket and fry for 12 minutes, until golden brown and cooked though. Place on a paper towel-lined plate to drain.
Melt the butter in a medium saucepan over medium low. Add the cajun seasoning and stir until mixture is the consistency of wet sand. Add the fried chicken wings and toss well, until covered in seasoning. Serve with ranch or blue cheese.
These wings reheat very well, so make a double batch if you'd like!
