Spinach Dip with Crusty Parmesan Topping

Ingredients

Dip

  • 1 10 ounce package frozen chopped spinach, thawed and squeezed dry
  • 1 8 ounce package cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded Parmesan cheese divided
  • ½ cup shredded mozzarella cheese
  • 2-3 cloves garlic minced
  • ½ cup finely chopped onion
  • 2 tablespoons unsalted butter
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
  • ¼ teaspoon crushed red pepper flakes optional

Parmesan Topping

  • 2 tablespoons melted butter
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella
  • ¼ cup breadcrumbs

Instructions

  • Prep Spinach: Thaw the frozen chopped spinach and squeeze out excess water thoroughly.
  • Sauté Veggies: In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and minced garlic, sautéing until softened and fragrant. Remove from heat.

  • Combine Dip Ingredients: In a large bowl, mix the softened cream cheese, sour cream, 1/2 cup shredded Parmesan, 1/2 cup shredded mozzarella, sautéed onion and garlic, spinach, black pepper, salt, and red pepper flakes (if using).

  • Bake the dip: Preheat your oven to 375°F (190°C). Transfer the spinach mixture to a baking dish, spreading evenly. Bake for 20-25 minutes or until the topping is golden brown and the dip is bubbling.

  • Prepare Parmesan Topping: Melt butter in a small bowl. Add the Parmesan cheese, breadcrumbs, and mozzarella for the topping

  • Assemble and Broil: Add topping and broil on low 3-4 minutes

  • Serve: Allow the dip to cool slightly before serving. This dish is best enjoyed warm.

Notes

You can adjust the ratio of Parmesan to breadcrumbs in the topping based on your preference for cheesiness or crunchiness.
