110 ouncepackage frozen chopped spinach, thawed and squeezed dry
18 ouncepackage cream cheesesoftened

1cupshredded Parmesan cheesedivided

Parmesan Topping
2tablespoonsmelted butter
½cupgrated Parmesan cheese
½cupshredded mozzarella
¼cupbreadcrumbs
Instructions
Prep Spinach: Thaw the frozen chopped spinach and squeeze out excess water thoroughly.
Sauté Veggies: In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and minced garlic, sautéing until softened and fragrant. Remove from heat.
Combine Dip Ingredients: In a large bowl, mix the softened cream cheese, sour cream, 1/2 cup shredded Parmesan, 1/2 cup shredded mozzarella, sautéed onion and garlic, spinach, black pepper, salt, and red pepper flakes (if using).
Bake the dip: Preheat your oven to 375°F (190°C). Transfer the spinach mixture to a baking dish, spreading evenly. Bake for 20-25 minutes or until the topping is golden brown and the dip is bubbling.
Prepare Parmesan Topping: Melt butter in a small bowl. Add the Parmesan cheese, breadcrumbs, and mozzarella for the topping
Assemble and Broil: Add topping and broil on low 3-4 minutes
Serve: Allow the dip to cool slightly before serving. This dish is best enjoyed warm.
Notes
You can adjust the ratio of Parmesan to breadcrumbs in the topping based on your preference for cheesiness or crunchiness.
