Black Eyed Susan Cocktail

An easy and refreshing drink, this fruity cocktail is the official drink of the Preakness. Stronger than it looks and perfect for a party. Makes 1 drink.

Equipment

Ingredients

  • 1 ounce vodka
  • 1 ounce spiced rum
  • 1 ounce peach schnapps (I am not a fan and usually substitute orange liqueur)
  • 2 ounces pineapple juice (bottled or freshly juiced)
  • 2 ounces orange juice (freshly squeezed)
  • 1 ounce ginger ale
  • orange slice and maraschino cherry (for garnish)

Instructions

  • Shake.  Fill a cocktail shaker with ice and add the vodka, rum, peach schnapps, pineapple juice, and freshly squeezed orange juice. Shake vigorously for 10-15 seconds or until the mixture is well chilled.
  • Pour, garnish and serve.  Pour into an ice-filled glass and add the ginger ale on top. Garnish with a maraschino cherry and a fresh orange slice. You can add a black-eyed Susan flower for an extra touch.

Notes

Freshly squeezed orange juice makes a world of difference in the flavor of this drink, but a nice quality bottled juice will work in a pinch!
A fresh black-eyed Susan makes a pretty garnish, too.
Don’t like peach schnapps?  Me neither.  You can substitute orange liqueur, or simply leave it out.
