Equipment

  • Stand/Hand Mixer
  • Mixing bowl
  • Whisk
  • Baking Sheet
  • Parchment paper
  • ¼ cup scoop or measuring cup

Ingredients

Cookies

  • 2 ¼ cups all-purpose flour 270 grams
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 8 tablespoons unsalted butter softened
  • ¾ cup granulated sugar
  • 1 egg room temperature
  • 1 teaspoon vanilla extract
  • 1 box strawberry flavored gelatin 3-ounce box, about 5 ½ tablespoons
  • ⅓ cup whole milk

Filling

  • 8 tablespoons unsalted butter softened
  • 1 cup powdered sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup marshmallow cream
  • ¼ cup strawberries fresh, chopped and patted dry; optional

Instructions

Bake the Cookies

  • Preheat the oven. Preheat oven to 375°F and position the racks to the upper-middle and lower-middle positions. Line 2 large baking sheets with parchment paper and set aside.
  • Whisk the dry ingredients. In a medium bowl, whisk together the flour, baking powder, and salt until thoroughly combined; set aside.
  • Cream the butter and sugar. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar at medium speed until light and fluffy, about 2 minutes, scraping down the bowl and paddle once.
  • Add the egg and flavorings. Mix in the egg and vanilla on medium speed until thoroughly combined, about 30 seconds, then add the strawberry gelatin and mix until combined, 20-30 seconds.
  • Alternate flour and milk. Add half the flour mixture and mix on low until just combined, then mix in the milk, then the remaining flour mixture until no streaks of flour remain.
  • Scoop the batter. Using a ¼-cup scoop or measuring cup, scoop batter onto the prepared baking sheets, spacing 2 inches apart.
  • Bake the cookies. Bake for 12-14 minutes, until set and lightly browned on the bottom, rotating pans and switching shelves halfway through baking.
  • Cool completely. Let the cookies set 1-2 minutes on the baking sheets, then transfer with a thin spatula to a wire rack to cool completely, about 30 minutes.

Make the Filling

  • Pat the strawberries dry. Pat the chopped strawberries dry with a paper towel to remove excess moisture from the surface.
  • Beat the filling base. In the bowl of a stand mixer fitted with the paddle attachment, beat the powdered sugar, softened butter, salt, and vanilla at medium speed until smooth and completely incorporated, 30-45 seconds.
  • Add the marshmallow cream. Mix on medium speed until incorporated, 20-30 seconds.
  • Fold in the strawberries. Fold in the strawberries with a rubber spatula until combined, then cover and refrigerate 1 hour to firm up slightly.

Assemble the Pies

  • Fill the cookies. Divide the filling between 6 of the cookies, spreading about ⅓ cup on the flat underside of each.
  • Top and chill. Top each with a second cookie, pressing gently to adhere, and store in the refrigerator until ready to serve.

Notes

The strawberries in the filling are optional, most of the strawberry flavor comes from the gelatin. Use fresh strawberries only; frozen berries release too much liquid.
Store leftovers in the refrigerator in an air-tight container for up to 5 days. These freeze well fully assembled: wrap in plastic wrap, place in a freezer bag, and defrost at room temperature.
You can make smaller whoopie pies with a tablespoon scoop.  Start checking for doneness at 8 minutes.
