Raspberry Mojito Recipe

Raspberries are the perfect complement to lime, sugar, and rum in this refreshing sweet-tart summertime cocktail.
Total Time:10 minutes

Equipment

  • muddler (or just the narrow end of a wooden spoon)

Ingredients

  • 1 tablespoon sugar
  • 2 tablespoons fresh lime juice
  • 12 large mint leaves
  • cup raspberries (fresh or frozen, see notes)
  • cup club soda
  • ¼ cup white rum

Instructions

  • Muddle. Muddle (gently press down and twist) the raspberries, mint leaves, sugar, and lime juice right in the glass you'll be using. Be sure to crush the mint leaves thoroughly to release their flavor.
  • Add liquids. Add the club soda and rum. Add ice, stir well, and serve, garnishing with a lime wedge, whole raspberry, and extra mint leaves.

Notes

Fresh or frozen raspberries are fine, but allow frozen ones to soften at room temperature for a few minutes to make them easier to muddle.
If you love mojitos, plant a pot of mint outside your back door.  It grows like a weed just about anywhere and comes back every year.
