Tips for Success

Don’t be afraid of sticky dough. Most new bakers add too much flour. A slightly tacky dough makes soft, light bread—your dough should just barely pull away from the bowl.

Room-temperature ingredients work best. Cold milk or eggs can slow down your yeast. Set them out 30 minutes before baking for better rising.

Your eyes are better than the clock. Instead of strict timing, learn the visual cues: properly risen dough should double in size and slowly fill halfway back when gently poked.

Let it cool completely. The hardest rule to follow, but it makes ALL the difference! Cutting warm bread releases steam and creates a gummy texture. Give it at least an hour on a cooling rack.

Store it right. Homemade bread has no preservatives, so it won’t last as long as store-bought. Use a bread box or clean towel for 2-3 days, or slice and freeze for longer storage.

These recipes have become my go-to for whatever season of life I’m in—from busy weekdays when the bread machine is my best friend to slow weekend mornings perfect for a beautiful sourdough loaf. Your first loaf might not be Instagram-worthy (mine sure wasn’t!), but it will still make the best toast you’ve ever had.
